Zucchini and cheddar pie

A zucchini and cheddar pie is a savory dish that's perfect for brunch, lunch, or a light dinner. Here’s a recipe to make a delicious zucchini and cheddar pie:

Ingredients

For the Crust:

  • 1 ¼ cups all-purpose flour
  • ¼ teaspoon salt
  • ½ cup unsalted butter, chilled and cubed
  • ¼ cup cold water (more if needed)

For the Filling:

  • 2 medium zucchinis, thinly sliced
  • 1 cup shredded cheddar cheese
  • 1 small onion, finely chopped
  • 2 large eggs
  • ½ cup sour cream or Greek yogurt
  • ¼ cup milk
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme or 1 tablespoon fresh thyme leaves
  • Salt and freshly ground black pepper, to taste

For Garnish:

  • Additional shredded cheddar cheese (optional)
  • Fresh thyme sprigs (optional)

Instructions

1. Prepare the Crust:

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, combine the flour and salt. Cut in the chilled butter until the mixture resembles coarse crumbs.
  3. Add cold water, a tablespoon at a time, mixing gently until the dough comes together.
  4. Turn the dough onto a lightly floured surface and roll it out to fit a 9-inch pie pan. Transfer the dough to the pan, pressing it into the bottom and up the sides. Trim any excess dough.
  5. Prick the bottom of the crust with a fork to prevent bubbling.

2. Pre-Bake the Crust:

  1. Place the pie crust in the preheated oven and bake for 10-12 minutes, or until lightly golden. Remove from the oven and set aside.

3. Prepare the Filling:

  1. Heat olive oil in a skillet over medium heat. Add the chopped onion and cook until softened and translucent, about 5 minutes.
  2. Add the zucchini slices and cook for an additional 5-7 minutes, or until the zucchini is tender. Season with salt, pepper, and thyme.
  3. In a large bowl, whisk together the eggs, sour cream (or Greek yogurt), and milk.
  4. Stir in the shredded cheddar cheese, grated Parmesan cheese, and the cooked zucchini mixture. Mix until well combined.

4. Assemble the Pie:

  1. Pour the zucchini and cheese mixture into the pre-baked crust and spread it evenly.
  2. If desired, sprinkle additional shredded cheddar cheese on top.

5. Bake:

  1. Return the pie to the oven and bake for 30-35 minutes, or until the filling is set and the top is golden brown.
